Brew #2 Sparrow Hawk Porter

3.3 lbs (1 can) German Bierkeller unhopped light liquid malt extract (LME)

1.5 lbs M&F plain light dry malt extract (DME)

3.3 lbs M&F plain dark DME

1 lb black patent malt

1 1/2 oz Northern Brewer hops (boiling 60 min)

1 oz Tettnanger hops (finishing 2 min)

3 pkg (15g) dry ale yeast – M&F?

60 minute boil

Priming: 3/4 cup corn sugar & 1/4 cup DME

 

Brew #3 Wise Ass Red Bitter

3.3 lbs M&F hopped light LME

1.4 lbs Alexander’s LME

1/8 lb (1/2 cup) roasted barley

2 oz Cascade whole cone hops (45 min boil)

1.2 oz Hallertau hop pellets (1 min finishing)

1 1/2 tsp Irish Moss (15 min boil)

Wyeast 1098 British Ale Yeast

46 minute boil

¾ cup corn sugar (priming)

 

Brew #4 Rocky Raccoon’s Crystal Honey Lager

3 1/2 lbs plain light DME

2 1/2 lbs light clover honey

1 1/2 oz Cascade hops pellets 60 min

1/2 oz Cascade hops pellets 3 min

Superior Australian Lager yeast

60 minute boil

Priming: 3/4 cup corn sugar & 1/4 cup DME

7 lbs plain light DME

1 lb 40L Crystal Malt

1/2 lb toasted 2-row pale malt

2 tsp gypsum

1 1/2 oz Northern Brewer (45 min boil)

1 oz Cascade (2 min boil)

2 oz oak chips

Whitbread ale yeast

45 minute boil

1 ½ cup light DME (priming)

1/2 cup (4 oz) Blackstrap Molasses

1 1/2 tsp Irish Moss (15 min)

2 oz Northern Brewer whole cone hops (60 min)

1 oz Willamette whole cone hops (2 min steep)

8 tsp gypsum

5 lbs fresh cherries crushed (15 min steep)

2 pkg Edme ale yeast 23g total

60 minute boil

This is a 6 gallon batch.

10 oz clover honey

2 oz Hallertau Hersbruker hop plugs (60 min)

1 oz Hallertau Hersbruker hop plugs (10 min)

1/4 tsp gypsum

1 tsp Irish Moss (15 min)

1 1/2 tsp yeast nutrient

Wyeast 3068 Weihenstephan Wheat

45 minute boil

Priming: 1 cup corn sugar & 1/3 cup light DME

1 tsp Irish Moss (15 min)

2 pkg M&F ale yeast

47 minute boil

Priming: 1 ½ cups light DME

 

Brew #16 Full Sail Ale

7 ½ lbs Cooper’s plain light LME

¾ lbs German crystal malt 5.5L

2 oz Nugget pellet hops (60 min)

½ oz Nugget pellet hops (15 min)

2 tsp gypsum

2 oz Dextrin Malt

1 ½ tsp Irish Moss (15 min)
